This video was filmed during the recording session for the Concerto Barocco CD, so there is at the back of the hall the Italian harpsichord that was used for some of the concertos--it isn't played in the video but it is in the background of the video along with other things from the recording session like mic cables and even the fluffy material used to dampen the bass sounds.

I can assure you ...

I can assure you that it is a baroque organ, not a harpsichord, made by the Dutch builders van der Putten. The material is all wood, specifically Lebanon cedar with snakewood keys. If you view the video in HD you can see the name of the builder on the front of the organ in the oval nameplate. The harpsichord has a completely different shape and sound.

It's not an organ and it's not a piano, it's a harpsichord. A predecessor to the piano, it uses quills to pluck strings. It does not play louder if you hit the keys harder, instead there are pedals you can push to switch between (I think) four volume levels. They were still used for a long time even after the invention of the piano because pianos were expensive and due to design flaws, would eventually bend out of shape due to the force of bazillions of tight strings inside it.
